Our journey began in our family kitchens and later took us into restaurants around the world.
But the cooking that stayed closest to us is the one we grew up with — food prepared at home, with patience, seasonal ingredients, and recipes passed from one generation to the next.
What we care about most are the ingredients — their quality, freshness, aroma, and seasonality. We take the time to choose them carefully, following their origin, the way they are grown, produced, and handled. Each product is chosen with intention.
This attention continues in the way we cook — a truly artisanal approach where pasta, sauces, and breads are made by hand, slowly and with care.
The dishes we serve come from family tables and from recipes that are slowly disappearing.
Keeping them alive — and sharing them with guests in private villas and homes across Tuscany — is what inspires our cooking.

GIANLUCA FUSI
Gianluca, born in Florence in 1974, is a connoisseur of simplicity and organization,.
He cooked in numerous Florentine and Tuscan kitchens before following his love for the ocean, he embarked on a career as a cruise ship chef, serving guests from around the world.
Celebrated for his mastery of traditional Tuscan cuisine, from handmade pastas to delicately prepared meats, Gianluca balances authenticity with a modern touch. Today, he brings his experience to private villa dining in Tuscany, crafting meals that reflect tradition, seasonality, and the finest local ingredients.

ROCCO Loisi
Rocco, born in Basilicata in 1987, is a free spirit and creative soul, qualities that define his cuisine.
From a very young age, Rocco felt that Italy was too small for him, so he traveled abroad to explore new cultures and flavors. It was during his time overseas that he discovered the inspiration behind his cooking, drawing from Asia and South America while mastering the Japanese technique of handling fish and meat.
Today, Rocco combines his international experience with authentic Italian ingredients, offering private chef experiences in Tuscany that are innovative, refined, and deeply rooted in Italian culinary traditions.
